A comforting and flavorful zucchini soup, perfect for cozy nights in or shared gatherings.

Ingredients

Scale
  • 1 tablespoon olive oil or butter
  • 2 large zucchini (about 6 cups, chopped into small pieces)
  • 1 large onion (chopped)
  • 3 cloves garlic (minced)
  • 3 cups vegetable stock (or chicken broth)
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper
  • ¼ teaspoon dried thyme (optional)
  • 1 cup sour cream or heavy whipping cream (use coconut milk for dairy-free)
  • Olive oil, sour cream, or chopped parsley (for garnish)

Instructions

  1. Heat the Oil or Butter: In a large pot, heat the tablespoon of olive oil or butter over medium heat.
  2. Sauté the Aromatics: Add the chopped onion and cook for about 5 minutes until soft and translucent. Add in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Embrace the Zucchini: Toss in your chopped zucchini, stirring well to coat with the onion and garlic mixture. Cook for about 5-7 minutes.
  4. Pour in the Stock: Introduce the vegetable stock and bring to a gentle boil. Reduce heat and simmer for about 10-15 minutes.
  5. Season It Up: After simmering, season the soup with salt, pepper, and dried thyme (if using). Adjust seasoning as needed.
  6. Blend Until Smooth: Carefully transfer the soup to a blender and puree until smooth. Stir in your choice of cream.
