30-Minute Creamy Tomato Gnocchi

A quick and comforting dish of creamy tomato gnocchi that warms the soul, perfect for weeknight dinners.

Ingredients

  • 1 can diced tomatoes
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the gnocchi in a large pot of salted boiling water according to package directions.
  2. Sauté the garlic in olive oil over medium heat until fragrant.
  3. Add the diced tomatoes, stirring to incorporate, and let simmer for 5 minutes.
  4. Cream it up by stirring in the heavy cream and seasoning with salt and pepper.
  5. Combine the cooked gnocchi with the sauce, stirring gently to coat.
