Creamy Pumpkin Sausage Gnocchi

A cozy comfort food delight combining the earthiness of pumpkin with hearty Italian sausage and pillowy gnocchi.

  • 16 oz mild Italian sausage (ground)
  • 1 TBSP butter
  • 1/2 yellow onion (finely minced)
  • 4 garlic cloves (minced)
  • 1/2 cup white wine (or chicken stock)
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1 tsp Italian seasoning
  • 1 cup heavy cream
  • 4 cups kale (chopped, tough stems removed)
  • 16 oz fresh or frozen gnocchi (uncooked)
  • 1/2 cup chicken stock (low sodium)
  • 1/2 cup fresh grated parmesan
  • Salt and black pepper to taste
  • 1/4 cup fresh basil (thinly sliced, chiffonade)

Instructions

  1. Prepare your ingredients by chopping your onion, mincing garlic, and slicing the kale.
  2. Cook the sausage in a large skillet over medium heat for about 5-7 minutes until browned.
  3. Sauté the minced onion and garlic for 2-3 minutes until softened.
  4. Deglaze with white wine or chicken stock, scraping the bottom of the pan.
  5. Add the pumpkin puree and Italian seasoning, and combine well.
  6. Incorporate the heavy cream and let it simmer for 2-3 minutes.
  7. Mix in the chopped kale and chicken stock, cooking for 4-5 minutes until kale wilts.
  8. Cook the gnocchi in salted boiling water according to package instructions.
  9. Combine the gnocchi with the creamy sauce, adding grated Parmesan cheese, salt, and pepper.
  10. Garnish with freshly sliced basil before serving.

Notes

For a lighter version, you can use half-and-half or a plant-based cream. Adjust ingredients to fit dietary preferences.
