Cherry Cobbler Muffins

Delightful Cherry Cobbler Muffins filled with juicy cherries and topped with a buttery crumble. Perfect for any occasion!

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter (melted)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen cherries
  • 1/4 cup granulated sugar (for cherries)
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the muffin tray by lining it with paper liners or spraying with non-stick spray.
  3. Mix the cherries with 1/4 cup sugar, cornstarch, and lemon juice in a bowl, then set aside.
  4. Combine flour, 1 cup granulated sugar, baking powder, and salt in a large bowl.
  5. Mix whisked milk, melted butter, egg, and vanilla in another bowl.
  6. Create the batter by pouring the wet ingredients into the dry ingredients and mixing until just combined.
  7. Fold in the cherry mixture gently using a rubber spatula.
  8. Fill muffin cups about 2/3 full with the batter.
  9. Bake for 15-20 minutes or until a toothpick comes out clean.
  10. Cool in the tin for 5 minutes, then transfer to a wire rack.

Notes

Dust with powdered sugar before serving and enjoy warm with whipped cream or vanilla ice cream.
