Cherry Cobbler Muffins

Delicious cherry cobbler muffins bursting with juicy cherries and topped with a buttery crumble, perfect for any occasion.

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter (melted)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen cherries
  • 1/4 cup granulated sugar (for cherries)
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the muffin tray by lining with paper liners or spraying with non-stick spray.
  3. Mix the cherries with 1/4 cup sugar, cornstarch, and lemon juice, then set aside.
  4. Combine the flour, 1 cup granulated sugar, baking powder, and salt in a large mixing bowl.
  5. Mix the milk, melted butter, egg, and vanilla extract in another bowl.
  6. Create the batter by pouring the wet ingredients into the dry ingredients and mixing until just combined.
  7. Fold the cherry mixture into the batter carefully.
  8. Fill the muffin cups about 2/3 full with the batter.
  9. Bake for 15-20 minutes until a toothpick comes out clean.
  10. Cool the muffins in the tin for 5 minutes before transferring to a wire rack.

Notes

Dust with powdered sugar before serving. Pair with whipped cream or vanilla ice cream for an extra treat.
