Tropical Grilled Thai Coconut Chicken Skewers

Delicious and flavorful skewers of chicken marinated in coconut milk and spices, perfect for summer gatherings.

  • 2 tablespoons fresh ginger (grated)
  • 3 cloves garlic (minced)
  • 1/4 cup soy sauce
  • 2 tablespoons dark soy sauce (optional)
  • 1 cup coconut milk
  • 2 tablespoons brown sugar (or honey)
  • 2 tablespoons fresh lime juice (freshly squeezed)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 pound chicken (dark meat preferred)
  • 6 pieces skewers (soaked in water for 30 minutes)

Instructions

  1. Prepare the Marinade: In a medium bowl, mix together the grated ginger, minced garlic, soy sauces, coconut milk, brown sugar (or honey), lime juice, salt, and pepper. Whisk until combined and smooth.
  2. Marinate the Chicken: Cut the chicken into 1-inch chunks. Place the chicken in a resealable bag or shallow dish and pour the marinade over it. Seal or cover and refrigerate for at least 1 hour, or up to 4 hours.
  3. Prepare the Skewers: Soak bamboo skewers in water for 30 minutes. Optionally, alternate chicken with colorful veggies.
  4. Preheat the Grill: Set your grill to medium-high heat.
  5. Skewer the Marinaded Chicken: Thread the marinated chicken onto the skewers.
  6. Grill the Chicken: Cook skewers on the grill for about 10-12 minutes, turning occasionally.
  7. Rest and Serve: Remove from grill and let rest for a few minutes before serving.

Notes

Serve with tropical fruit salsa, lime wedges, and fresh greens for a delightful presentation.
