Teriyaki Chicken Skewers

Deliciously tender chicken marinated in a smoky, sweet teriyaki glaze, perfect for summer gatherings or easy weeknight dinners.

  • 2 lbs. chicken thighs (or breasts), cut into 1″ cubes
  • 2 tbsp cornstarch
  • 1 cup water (or chicken stock for richer flavor)
  • 1/3 cup brown sugar
  • 1/3 cup soy sauce (low sodium)
  • 2 cloves garlic, minced
  • 1 tbsp rice vinegar
  • 1/2 tbsp fresh ginger, minced
  • 1 tbsp honey (or maple syrup for vegan option)
  • 1/2 tsp sesame oil
  • 8 skewers, soaked in water for 30 minutes
  • Sesame seeds and chopped green onion, for garnish

Instructions

  1. Prepare the chicken marinade by whisking together water, brown sugar, soy sauce, garlic, rice vinegar, ginger, honey, sesame oil, and cornstarch in a medium bowl.
  2. Marinate the chicken by adding the pieces to the marinade, coating well, and refrigerating for at least 30 minutes.
  3. Preheat your grill to medium-high heat, or oven to 400°F (200°C).
  4. Assemble the skewers by threading marinated chicken pieces onto them, alternating with veggies if desired.
  5. Grill the skewers for 8-10 minutes or bake for 20-25 minutes, depending on the cooking method, until chicken reaches 165°F internal temperature.
  6. Garnish with sesame seeds and chopped green onion before serving.
  7. Enjoy with steamed rice or a fresh salad!

Notes

Allow chicken to marinate longer for deeper flavor. Wooden skewers should be soaked to prevent burning.
