Tasty Protein Bars Without Protein Powder

Delicious homemade protein bars that provide a nutritious boost without protein powder, perfect for snacks or breakfast.

  • 1.25 cups oats
  • 1/2 cup almond flour
  • 3/4 cup cashew butter
  • 1/2 cup hemp hearts
  • 2 tbsp coconut oil
  • 2 tbsp maple syrup
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 1/2 cup mini chocolate chips
  • 1/4 cup mini chocolate chips (melted and cooled)
  • 1 tbsp coconut oil (for melting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8×8-inch baking dish lined with parchment paper.
  3. Mix the oats, almond flour, hemp hearts, and salt in a large mixing bowl.
  4. In a separate bowl, whisk together the cashew butter, maple syrup, melted coconut oil, and vanilla extract.
  5. Combine the wet ingredients into the dry ingredients and mix well.
  6. Fold in the mini chocolate chips gently.
  7. Spread and press the mixture into the prepared pan.
  8. Bake for about 15-20 minutes until the edges are golden brown.
  9. Cool for 10-15 minutes in the pan and then on a wire rack.
  10. Add the melted chocolate drizzle once cooled.
  11. Slice and serve the protein bars.

Notes

These bars can be stored in an airtight container in the fridge for up to a week or in the freezer for a month.
