Tarte au Sucre

A delightful French dessert featuring a golden crust filled with creamy, sweet goodness that’s simple to make and perfect for any occasion.

  • 200 g all-purpose flour
  • 3 large eggs
  • 1 sachet dried yeast (about 710 g)
  • 50 g unsalted butter
  • A handful of nuts (like hazelnuts)
  • 20 g sugar
  • 10 cl milk

Instructions

  1. Prepare the Dough: In a large bowl, combine the flour and sugar. In a small saucepan, melt the butter and let it cool slightly. Once cooled, mix in the milk and yeast until frothy. Add this mixture to the flour and sugar. Stir it until a dough begins to form.
  2. Knead and Rise: Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place it in a lightly greased bowl and cover it with a clean kitchen towel. Let it rise in a warm spot for 60 minutes, or until doubled in size.
  3. Prepare the Filling: While the dough rises, whisk the eggs in a separate bowl until frothy. Add the remaining sugar and mix well, then incorporate any remaining milk.
  4. Form the Crust: Once the dough has risen, punch it down to release some of the air. Roll it out to fit a tart pan, and then place it inside, gently pressing it into the edges.
  5. Add the Hazelnuts: Sprinkle the toasted hazelnuts evenly across the dough.
  6. Fill and Bake: Pour in the prepared filling mixture over the hazelnuts, carefully. Bake in a preheated oven at 180°C (350°F) for 30-35 minutes or until golden and set.
  7. Cool and Serve: Once out of the oven, let the tarte cool on a wire rack.

Notes

For a vegan option, use flaxseed eggs and coconut oil instead of butter. Serve with whipped cream or vanilla ice cream for an extra treat.
