Summer Berry Poke Cake

A delightful dessert combining fresh summer berries and a classic poke cake for a refreshing treat.

Ingredients

  • 1 box vanilla cake mix
  • 3 large eggs
  • 1 cup water
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1 can sweetened condensed milk
  • 1 cup whipped topping
  • Additional berries for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the vanilla cake mix, 3 eggs, and 1 cup of water in a large mixing bowl until smooth.
  3. Pour the batter into a greased 9×13 inch pan and bake for 25-30 minutes.
  4. Remove the cake from the oven and let it cool for 10 minutes. Poke holes all over the top.
  5. Pour the sweetened condensed milk over the cake, letting it soak in for at least 30 minutes.
  6. Spread 1 cup of whipped topping evenly over the cake.
  7. Top with your mixed berries as desired.
  8. Chill the cake in the refrigerator for at least an hour before serving.
