Spaghetti with Salmon and Asparagus

Creamy and zesty spaghetti featuring tender salmon and crisp asparagus, perfect for a comforting meal with family or friends.

Ingredients

  • 200 g dry spaghetti
  • 250 g asparagus, sliced
  • 200 g salmon, cubed
  • 150 ml vegetable broth
  • 200 ml cooking cream
  • 1 clove garlic, minced
  • A splash of lemon juice
  • 20 g butter
  • 1 ladle of pasta water
  • 2 tablespoons grated Parmesan

Instructions

  1. Prepare the ingredients by rinsing and trimming the asparagus, chopping the garlic, and cubing the salmon.
  2. Cook the spaghetti in a large pot of salted boiling water for 8-10 minutes until al dente.
  3. Sauté the garlic in melted butter in a skillet, then add asparagus and cook until bright green.
  4. Add the salmon to the skillet and cook until browned and cooked through.
  5. Pour in vegetable broth and cooking cream, stir and simmer for 3-4 minutes.
  6. Combine the spaghetti with the sauce, adding reserved pasta water to achieve desired consistency.
  7. Finish by stirring in grated Parmesan until it melts and coats the pasta.

Notes

Feel free to substitute ingredients based on dietary preferences, such as using chicken or tofu instead of salmon.
