  • 1 cup light brown sugar (packed)
  • 1 cup vegetable oil (or melted butter)
  • 4 large eggs
  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder

  • 1 teaspoon vanilla extract
  • 2 cups chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix granulated sugar, brown sugar, and vegetable oil in a large mixing bowl until smooth.
  3. Add eggs one at a time, whisking thoroughly after each addition.
  4. Incorporate flour, baking powder, and salt in a separate bowl, then gradually mix into wet ingredients.
  5. Stir in vanilla extract and chopped pecans using a spatula.
  6. Prepare a loaf pan by greasing or lining it with parchment paper, then pour in the batter.
  7. Bake for 55-60 minutes or until a toothpick inserted comes out clean.
  8. Cool the loaf for about 10 minutes before transferring to a wire rack to cool completely.
