  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 pie crust (store-bought or homemade)
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup cold butter, cubed
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the cherries and sweeteners in a mixing bowl, tossing until well coated. Let it sit for 10-15 minutes.
  3. Taste the filling and adjust sweetness as desired.
  4. Roll out the pie crust and fit it into a 9-inch pie plate. (Pre-bake if desired for crispiness).
  5. Mix the crumble in a bowl with flour, oats, brown sugar, cinnamon, and salt, then add the cold butter until crumbly.
  6. Pour the cherry mixture into the prepared crust and top with the crumble.
  7. Bake for 45-50 minutes until golden brown and bubbly.
  8. Cool for at least 20 minutes before slicing.
