Grilled Nectarine Burrata Prosciutto Salad

A vibrant salad featuring grilled nectarines, creamy burrata, and savory prosciutto, perfect for summer gatherings.

  • 4 nectarines, pitted and quartered
  • 8 ounces burrata cheese, torn
  • 8 slices prosciutto
  • 4 ounces cherry tomatoes, halved
  • 2 heirloom tomatoes, halved and cut into eighths
  • 1/2 cup fresh cherries, pitted and halved
  • 1/2 cup mixed baby spring greens
  • Finishing salt and fresh ground black pepper
  • Grilled baguette, for serving
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon white wine vinegar
  • 1 tablespoon lemon zest
  • 1 tablespoon fresh oregano, roughly minced
  • 1 tablespoon fresh mint, roughly minced
  • 1 tablespoon fresh lemon thyme leaves
  • 1/2 cup extra virgin olive oil
  • Pinch of salt and fresh ground black pepper as desired

Instructions

  1. Preheat your grill to medium heat.
  2. Prepare the nectarines by pitting and quartering them; toss with olive oil and salt.
  3. Grill the nectarines cut side down for 4-5 minutes until charred.
  4. Prepare the dressing by whisking lemon juice, vinegar, zest, oregano, mint, thyme, and olive oil. Season to taste.
  5. Assemble the salad with mixed greens, cherry tomatoes, heirloom tomatoes, and cherries.
  6. Add grilled nectarines, burrata, and prosciutto on top.
  7. Drizzle the dressing over the salad and top with finishing salt and pepper.
  8. Serve with grilled baguette on the side.

Notes

Substitute nectarines with peaches, and burrata with fresh mozzarella if needed.
