Summer Berry Poke Cake

A delightful dessert featuring a light and fluffy vanilla cake infused with fresh summer berries, topped with cream cheese frosting and berry sauce.

  • 1 box vanilla cake mix
  • 3 large eggs
  • 1 cup water
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup whipped cream
  • Additional mixed berries for topping
  • Berry sauce (made from heating mixed berries with sugar until thickened)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the vanilla cake mix, eggs, and water in a large mixing bowl.
  3. Blend until the batter is smooth and free of lumps.
  4. Pour the batter into a greased 9×13-inch baking dish.
  5. Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  6. Prepare your berry sauce by combining mixed berries with sugar over medium heat.
  7. Poke holes in the cake with a fork after it’s cooled for 10 minutes.
  8. Pour the berry sauce evenly over the cake.
  9. Combine cream cheese and powdered sugar in a bowl and beat until smooth.
  10. Fold in the whipped cream until fully incorporated.
  11. Spread the frosting over the cooled cake.
  12. Top with additional fresh mixed berries.
  13. Refrigerate for at least an hour before serving.

Notes

For a smooth berry sauce, mash the berries or blend them briefly. Chill the cake for the best flavor and presentation.
