Ingredients

Scale
  • 500g Corned Beef (or pastrami or plant-based option)
  • 1 cup Sauerkraut
  • 200g Swiss Cheese, shredded
  • 4 cups Chicken Stock
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 2 Carrots, diced
  • 2 sticks Celery, diced
  • 1 tablespoon Worcestershire Sauce
  • 1 teaspoon Dill (dried or fresh)
  • 1 cup Cream (optional)

Instructions

  1. Sauté the base: In a large pot, heat a drizzle of oil over medium heat. Add the diced onions, carrots, and celery, sautéing until they’ve softened, about 5-7 minutes.
  2. Add the garlic: Toss in the minced garlic and stir for about a minute until fragrant.
  3. Incorporate corned beef and sauerkraut: Add the chopped corned beef and drained sauerkraut, stirring everything together.
  4. Pour in the stock: Gradually add the chicken stock to the pot, stirring to combine all the ingredients.
  5. Season and simmer: Stir in the Worcestershire sauce and dried dill. Let the soup simmer on low heat for about 20-30 minutes.
  6. Finish with cheese and cream: Once you’re ready, stir in the shredded Swiss cheese and add cream if desired.
  7. Taste and adjust: Always taste your soup before serving and adjust the seasoning if necessary.

Notes

Garnish with fresh dill or chives and serve with crusty bread for an authentic experience. For added flavors, consider spicy or vegetarian variations.
