Jello Sugar Cookies

Colorful, soft, and chewy Jello Sugar Cookies that are perfect for any gathering.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 ¾ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 34 flavors of Jello gelatin powder (e.g., strawberry, lime, grape)
  • Additional sugar for rolling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar using an electric mixer.
  3. Add the large egg and 2 tablespoons of your chosen Jello flavor to the butter-sugar mixture.
  4. Mix together the all-purpose flour, baking powder, and salt in another bowl.
  5. Gradually add the dry mixture to your wet ingredients.
  6. Add a couple more tablespoons of Jello for color and flavor.
  7. Chill the dough in the refrigerator for at least 30 minutes.
  8. Roll tablespoon-sized portions of dough into balls and coat in sugar.
  9. Bake in the preheated oven for 10-12 minutes.
  10. Cool on a wire rack before enjoying!

Notes

Chill the dough longer if cookies spread too much, and ensure your baking powder is fresh.
