Huckleberry Crumb Bars

Delightful huckleberry crumb bars with a buttery crust and jammy fruit filling, perfect for summer treats.

  • 13/4 cups (225 grams) all-purpose flour
  • 1/8 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon ground cinnamon
  • 6 tablespoons (75 grams) granulated sugar
  • 1/4 cup (50 grams) light brown sugar
  • 12 tablespoons (169 grams) unsalted butter (melted)
  • 1 teaspoon pure vanilla extract
  • 2 cups (300 grams) huckleberries
  • 1 tablespoon cornstarch
  • 1/2 cup (100 grams) granulated sugar
  • 1/8 teaspoon kosher salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×9-inch baking dish with butter or line it with parchment paper.
  3. Combine the flour, baking powder, salt, cinnamon, granulated sugar, and brown sugar in a large bowl.
  4. Pour the melted butter over the dry ingredients and add the vanilla extract.
  5. Stir until everything is moistened and looks like a thick dough.
  6. Set aside about one cup of the mixture for the topping.
  7. Press the remaining mixture firmly into the bottom of the prepared baking dish.
  8. In another bowl, combine huckleberries, cornstarch, 1/2 cup granulated sugar, and a pinch of salt.
  9. Toss gently to coat the berries, then spread the mixture evenly over the crust.
  10. Crumble the reserved mixture over the huckleberries.
  11. Bake for 30-35 minutes or until golden brown and bubbly.
  12. Cool for at least 15 minutes before slicing into squares.

Notes

These bars can be served warm or chilled, great with ice cream or whipped cream.
