Pineapple BBQ Pork Skewers

Juicy pork tenderloin skewers with fresh pineapple, bell pepper, and red onion, all glazed in a sweet BBQ sauce.

  • 1 pound pork tenderloin, cut into 1-inch cubes
  • 1 fresh pineapple, cut into 1-inch chunks
  • 1 red onion, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1/2 cup BBQ sauce
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper

Instructions

  1. Prepare your skewers: If using wooden skewers, soak them in water for 30 minutes before grilling.
  2. In a bowl, combine the BBQ sauce, olive oil, soy sauce, garlic powder, and black pepper. Whisk until smooth.
  3. Toss the pork tenderloin cubes into the marinade, ensuring each piece is well-coated.
  4. While waiting, cut your pineapple, onion, and bell pepper.
  5. Grab your skewers and thread them in the order of: pork, pineapple, onion, and bell pepper.
  6. Preheat your grill to medium-high heat.
  7. Place your skewers on the grill, turning occasionally for even cooking for about 8-10 minutes.
  8. In the last couple of minutes, brush additional BBQ sauce onto the skewers.
  9. Once off the grill, let them rest for a few minutes before serving.

Notes

For a fun twist, substitute pork with shrimp or add more veggies like zucchini and cherry tomatoes.
