Comforting Roasted Chicken

A cozy roasted chicken recipe that brings warmth, love, and nostalgia to your dining table.

  • 1 whole chicken (about 45 lbs)
  • 2 tablespoons olive oil
  • Salt and pepper (to taste)
  • 1 lemon (cut in half)
  • Fresh herbs (rosemary, thyme, or parsley)
  • 45 garlic cloves (smashed, but not peeled)
  • Vegetables (carrots, potatoes, and onions, chopped)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Remove the chicken from any packaging and pat it dry with paper towels.
  3. Drizzle the olive oil all over the chicken and season generously with salt and pepper.
  4. Squeeze the juice of one lemon half over the chicken and place the other half inside the cavity along with garlic cloves and fresh herbs.
  5. Toss your chopped vegetables in a bowl with olive oil, salt, and pepper, then spread them around the chicken in the roasting dish.
  6. Carefully place the chicken in the center of your preheated oven and roast for about 1 hour and 15 minutes.
  7. Let the chicken rest for about 10-15 minutes before carving.
