Philly Tomato Pie

A comforting, savory pie that brings the essence of pizza and homemade bread together, perfect for family gatherings.

Ingredients

  • 320 g warm water (~ 1 1/3 cups)
  • 3/4 tsp active dry yeast
  • 1 1/2 tsp honey (or sugar)
  • 1/4 cup olive oil (1/4 cup + 2 tbsp divided)
  • 400 g flour (~ 2 3/4 cups)
  • 1 1/4 tsp Diamond Crystal kosher salt
  • 1/4 cup water
  • 1 tsp salt
  • 28 oz can whole peeled tomatoes
  • 3 tbsp olive oil (2 tbsp + 1 tbsp divided)
  • 2 cloves garlic (peeled)
  • Salt to taste
  • Pinch dried oregano
  • Grated Parmesan or Pecorino
  • Olive oil for drizzling

Instructions

  1. Prepare the Dough: In a mixing bowl, combine warm water, active dry yeast, and honey. Let it sit for 5-10 minutes until frothy.
  2. Mix in the Flour and Salt: Add flour and kosher salt to the mixture, stirring until a dough forms.
  3. Knead the Dough: Transfer to a floured surface and knead for 8-10 minutes until smooth and elastic.
  4. First Rise: Lightly coat a bowl with olive oil, place the dough inside, cover, and let it rise in a warm spot for about an hour.
  5. Make the Tomato Sauce: In a saucepan, heat olive oil and sauté garlic for 2 minutes. Add whole peeled tomatoes, water, salt, and oregano; simmer for 20 minutes.
  6. Preheat the Oven: Heat the oven to 450°F (230°C).
  7. Shape the Dough: After rising, punch down the dough and roll it out to fit your baking dish.
  8. Assemble the Pie: Grease the baking dish, place rolled dough, spread tomato sauce, and sprinkle cheese on top.
  9. Bake: Bake for 25-30 minutes until edges are golden brown.
  10. Serve: Let cool, drizzle with olive oil, slice, and enjoy!

Notes

For a spicy kick, add chili flakes. Adjust seasoning in the sauce to taste.
