Orange Creamsicle Cupcakes

  • 2 large eggs
  • 3/4 cup sour cream
  • 2 tablespoons orange zest

  • 1 teaspoon salt

  • 3 tablespoons orange juice (for frosting)
  • 4 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a muffin tin with cupcake liners.
  3. Whisk together the cake flour, baking powder, baking soda, and salt.
  4. Cream the salted butter and granulated sugar together until light and fluffy.
  5. Add the eggs, one at a time, mixing well after each addition.
  6. Incorporate the sour cream, milk, orange juice, vanilla extract, and orange zest until smooth.
  7. Gradually add the dry ingredients to the wet mixture, folding gently.
  8. Fill the cupcake liners about two-thirds full with the batter.
  9. Bake for 18-20 minutes until golden brown and a toothpick comes out clean.
  10. Remove from the oven and let cool in the pan for about 5 minutes before transferring to a wire rack.
  11. Make the frosting by beating the softened butter until creamy, then adding powdered sugar, orange juice, vanilla extract, and orange zest.
  12. Frost the cooled cupcakes as desired.
