White Chicken Chili

A warm and comforting White Chicken Chili that’s packed with flavor, perfect for chilly evenings or gatherings.

Ingredients

Scale
  • 500g boneless, skinless Chicken Breast
  • 2 tablespoons Olive Oil
  • 4 cloves Garlic, minced
  • 1 medium Onion, diced
  • 1 Green Bell Pepper, diced
  • 1 can (4oz) Canned Green Chiles
  • 4 cups Low-Sodium Chicken Broth
  • 1 cup Corn, fresh or frozen
  • 1 can Black Beans, drained and rinsed
  • 100g Cream Cheese
  • 2 teaspoons Cumin
  • 1 tablespoon Chili Powder
  • Salt and Pepper, to taste

Instructions

  1. Sauté the Chicken: In a large pot, heat the olive oil over medium heat. Add the diced chicken and season it with salt and pepper. Cook it until browned and no longer pink in the centre, about 5–7 minutes. Remove the chicken and set it aside.
  2. Sauté the Veggies: In the same pot, toss in the diced onions and green bell pepper. Cook until soft, about 3–4 minutes. Add the minced garlic and cook for an additional minute until fragrant.
  3. Mix in the Spices: Sprinkle in the cumin and chili powder, stirring well to coat the veggies.
  4. Combine Everything: Return the cooked chicken back to the pot, along with the canned green chiles, chicken broth, corn, and black beans. Stir gently and bring it to a light simmer.
  5. Add Creaminess: Let the chili simmer on low heat for about 20 minutes. Five minutes before it’s done, stir in the cream cheese until there are no lumps and the chili is creamy.
  6. Taste and Adjust: Taste your creation! Add salt, pepper, or more spices as needed. A squeeze of lime juice brightens the flavor just before serving.

Notes

Consider using jalapeños or spicy green chiles for added heat. This dish freezes beautifully—let it cool completely before freezing.
