Loaded Taco Potato Soup

A hearty and flavorful soup that combines the essence of tacos with creamy potatoes, topped with all your favorite taco fixings.

Ingredients

Scale
  • 4 medium Yukon Gold potatoes, diced
  • 1 lb ground beef or turkey
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 tbsp taco seasoning
  • 4 cups low-sodium chicken broth
  • 8 oz cream cheese
  • 1 cup shredded cheddar cheese
  • Sour cream (for garnish)
  • Tortilla chips, diced tomatoes, jalapeños, and green onions (for toppings)

Instructions

  1. Sauté the meat and veggies: In a large pot over medium heat, add a splash of oil, and once it’s hot, toss in the diced onion and minced garlic. Sauté for about 3-4 minutes until the onions are translucent. Add the ground beef or turkey, browning it until cooked through (around 6-8 minutes).
  2. Add the spices: Once the meat is browned, sprinkle in the taco seasoning, stirring well to coat the meat evenly.
  3. Introduce the potatoes: Dice up your potatoes and toss them into the pot. Stir everything together.
  4. Pour in the broth: Add the chicken broth, bringing everything to a gentle boil. Once boiling, reduce the heat to a simmer, cover the pot, and let it cook for about 15-20 minutes.
  5. Cream it up: After the potatoes are tender, add the cream cheese, stirring until melted and incorporated.
  6. Final touches: Stir in the shredded cheddar cheese until melted. Adjust seasoning if needed.
  7. Plating: Ladle the soup into bowls and top with sour cream, tortilla chips, tomatoes, jalapeños, and green onions.
