Cozy Autumn Wild Rice Soup

A warm and comforting soup filled with wild rice, sweet potatoes, kale, and aromatic herbs, perfect for chilly autumn days.

Ingredients

  • 1 cup wild rice
  • 1 large sweet potato, diced
  • 2 cups kale, chopped
  • 1 cup mushrooms, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper, to taste
  • Olive oil for sautéing

Instructions

  1. Prep your ingredients: Wash and chop all the vegetables.
  2. Sauté the base: Drizzle olive oil in a large pot over medium heat, add onion and sauté for 5 minutes until translucent. Add garlic and sauté for 1–2 minutes.
  3. Add the mushrooms: Toss in sliced mushrooms, sautéing until tender, about 5 minutes.
  4. Incorporate the sweet potato: Stir in diced sweet potato and sauté for a couple of minutes.
  5. Introduce wild rice: Add wild rice and vegetable broth, bring to a boil, then reduce to simmer for 45 minutes.
  6. Add kale and herbs: Stir in kale, thyme, rosemary, and seasoning, and let simmer for another 10 minutes.
  7. Taste and adjust: Personalize the flavors to your liking.
  8. Serve hot: Ladle into bowls and add a sprinkle of cracked pepper or drizzle of olive oil before serving.

Notes

This soup can be served with warm, crusty bread or a side salad. It freezes well and can be reheated easily.
