The Ultimate Comfort in a Bowl: Chicken Noodle Soup

A classic chicken noodle soup that’s comforting, hearty, and perfect for cold days.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts or thighs
  • 4 cups egg noodles (or whole grain/gluten-free noodles)
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium onion, diced
  • 2–3 cloves garlic, minced
  • 8 cups chicken stock or broth
  • 1 teaspoon fresh thyme or parsley (or dried if fresh isn’t available)
  • 1 bay leaf (optional)
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Sauté the aromatics: In a large pot over medium heat, drizzle a splash of olive oil. Add the diced onion and sauté until translucent (about 3-4 minutes). Toss in the minced garlic for the last minute.
  2. Add the vegetables: Toss in your diced carrots and celery. Stir them in and let them soften slightly (around 5 minutes).
  3. In goes the chicken: Add the chicken breasts or thighs to the pot, pour enough chicken stock to cover the chicken, and bring it to a boil. Reduce to a simmer and cook for about 20 minutes.
  4. Shred the chicken: Remove the chicken from the pot and drain it on a chopping board. Use two forks to shred the meat and set it aside.
  5. Reintroduce the flavour: Add the shredded chicken and noodles to the pot. Pour in an additional cup of stock if needed, and let it simmer until the noodles are tender (about 7-10 minutes).
  6. Season to perfection: Season with salt, pepper, and any herbs you’re using. Taste and adjust as needed. Garnish with fresh parsley if desired.
  7. Finishing touch: Serve hot, removing the bay leaf if used.

Notes

For a creamy version, add a splash of heavy cream towards the end. If you prefer a spicy soup, add red pepper flakes or jalapeños.
