Cajun Potato Soup

A delicious Cajun potato soup that warms both the belly and the soul, featuring creamy potatoes and a kick of Cajun spices with andouille sausage.

  • 1 lb Andouille sausage
  • 4 cups Potatoes (Russet or Yukon Gold)
  • 1 Onion (sweet or yellow)
  • 2 stalks Celery
  • 1 Bell pepper (mixed colors)
  • 3 cloves Garlic
  • 2 tbsp Cajun seasoning
  • 1 cup Heavy cream
  • 4 cups Chicken broth
  • Salt & Pepper to taste
  • 2 Green onions

Instructions

  1. Prep your ingredients: Start by washing and peeling the potatoes, then chop them into bite-sized cubes. Dice the onion, celery, bell pepper, and garlic.
  2. Sauté the sausage: In a large pot, heat olive oil over medium heat. Add sliced sausage and sauté until browned, about 5-7 minutes.
  3. Add aromatics: Toss in diced onion, celery, and bell pepper. Sauté until the onions are translucent, about 4-5 minutes.
  4. Infuse with garlic: Add minced garlic next, cooking for 1 minute until fragrant.
  5. Spice it up: Sprinkle in Cajun seasoning and stir to coat the vegetables and sausage.
  6. Potato time: Add cubed potatoes and chicken broth, ensuring the potatoes are submerged. Bring to a boil, then reduce to a simmer. Cook until potatoes are tender, about 15-20 minutes.
  7. Cream it up: Stir in the heavy cream. Optionally mash some potatoes for a chunkier texture.
  8. Add cheddar cheese until melted. Adjust seasoning with salt and pepper.
  9. Final touches: Simmer for another 5 minutes, adjusting broth or cream if needed for consistency.
  10. Serve hot, topped with green onions and a drizzle of cream, alongside warm bread.

Notes

Cajun potato soup tastes even better the next day as the flavors deepen. Freeze leftovers in an airtight container for up to three months.
