Zucchini Pizza Casserole

A hearty casserole combining all the classic flavors of pizza with zucchini as the star ingredient.

  • 4 cups shredded zucchini
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 2 cups pizza sauce
  • 1 green bell pepper, chopped
  • 1/2 cup sliced mushrooms
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded cheddar cheese

Instructions

  1. Prepare your zucchini: Start by grating the zucchini using a box grater or food processor. Sprinkle the salt over the zucchini and let it sit in a colander for about 15–20 minutes.
  2. Preheat the oven: While the zucchini is draining, preheat your oven to 375°F (190°C).
  3. Mix the zucchini crust: After draining, squeeze out excess moisture, then mix in the eggs and grated Parmesan cheese.
  4. Prepare the beef filling: In a large skillet, brown the ground beef with the chopped onion until no longer pink. Mix in the green bell pepper and mushrooms, then stir in the spices.
  5. Layer the casserole: In a greased baking dish, press the zucchini mixture into the bottom, layer with half the pizza sauce, add the beef mixture, and top with the remaining sauce and cheeses.
  6. Bake it to perfection: Bake for 30–35 minutes until the cheese is melted and bubbly.
  7. Cool and serve: Let it cool for 10 minutes before serving warm.

Notes

Consider serving with a fresh garden salad or garlic bread. Garnish with fresh basil or parsley.
