Sweet Potato and Sausage Casserole

  • 2 large sweet potatoes, peeled and cubed
  • 1 pound sausage (Italian or your choice), crumbled
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the sweet potatoes: Peel and cube them into bite-sized chunks.
  3. Cook the sausage in a large skillet over medium heat until browned, about 5-7 minutes.
  4. Sauté the onion in the same skillet with olive oil until translucent, then add garlic for another minute.
  5. Combine the cooked sausage, sweet potatoes, chicken broth, salt, black pepper, paprika, and thyme in the skillet and stir well.
  6. Layer the mixture in a greased 9×13-inch baking dish.
  7. Sprinkle shredded cheese generously over the top.
  8. Bake covered with aluminum foil for 25-30 minutes, then bake uncovered for an additional 10-15 minutes until bubbly and golden.
  9. Cool for 5-10 minutes before serving.

Notes

Feel free to add extra herbs or spices according to your taste. This casserole can be made ahead of time and refrigerated.
