Pork Tenderloin with Apple Cider Glaze

A delightful pork tenderloin dish with a sweet and tangy apple cider glaze, perfect for fall.

  • 1.5 lbs pork tenderloin
  • 1 cup apple cider
  • 2 tbsp Dijon mustard
  • 2 tbsp brown sugar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 2 large sweet potatoes
  • 1/4 cup milk
  • 2 tbsp butter
  • 1/2 tsp cinnamon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine apple cider, Dijon mustard, brown sugar, salt, and pepper in a saucepan. Simmer for about 10-15 minutes until thickened.
  3. Heat olive oil in a large skillet over medium-high heat and sear the tenderloin on all sides for about 2-3 minutes.
  4. Pour the reduced apple cider glaze over the seared tenderloin, making sure it’s well coated.
  5. Transfer the skillet to the preheated oven and roast for about 20-25 minutes until internal temperature reaches 145°F (63°C).
  6. Peel and chop sweet potatoes, boil in salted water until tender, about 15-20 minutes, then mash with milk, butter, cinnamon, and a pinch of salt.
  7. Remove the tenderloin from the oven and let it rest for 5-10 minutes.
  8. Slice the pork tenderloin and serve on a platter, drizzled with any remaining glaze, alongside the sweet potato mash.
