Zesty Lemon Garlic Shrimp and Asparagus

A vibrant dish featuring succulent shrimp, tender asparagus, and a zesty lemon-garlic sauce, perfect for cozy evenings or impressing your friends.

  • 1 pound shrimp (peeled and deveined)
  • 1 bunch asparagus (trimmed and cut into pieces)
  • 3 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1 lemon (juice and zest)
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Prep your ingredients: Peel and devein the shrimp, rinse and pat dry. Trim the asparagus, mince the garlic, and zest the lemon.
  2. Heat the pan: In a large skillet, heat 3 tablespoons of olive oil over medium-high heat.
  3. Cook the asparagus: Add the asparagus pieces to the skillet and sauté for about 3–4 minutes.
  4. Sauté the shrimp: In the same pan, add garlic and sauté for about 30 seconds, then add the shrimp and cook for 2–3 minutes on each side.
  5. Add lemon love: Once shrimp are cooked, stir in the lemon juice and zest, season with salt and pepper, and add back asparagus.
  6. Final touch: Remove from heat and sprinkle with freshly chopped parsley before serving.

Notes

For a spicy kick, add red pepper flakes or for a creamy touch, toss in some shaved Parmesan cheese before serving. This dish can also be made vegan by substituting shrimp with marinated tofu.
