Apple Pie Enchiladas

  • 1 (21 ounce) can apple pie filling or homemade apple pie filling
  • 6 8-inch flour tortillas
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the filling by peeling, coring, and slicing about 4-5 medium apples, or set aside canned filling.
  3. Assemble the enchiladas by placing filling in the center of each tortilla and rolling them tightly.
  4. Make the sauce by melting butter, mixing in sugars, and then adding water to simmer.
  5. Pour the prepared sauce over the enchiladas in a baking dish.
  6. Bake in the oven for 25–30 minutes until bubbly and golden.
  7. Serve warm, optionally with ice cream or whipped cream.

Notes

The enchiladas can be made with other fruits like pears or berries. Adjust sugar and spices accordingly.
