Cozy Pumpkin Cream Cheese Swirl Brownies

  • 1 cup (200 g) granulated sugar
  • 1/2 cup (110 g) brown sugar, packed
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 3/4 cup (95 g) all-purpose flour
  • 1/2 cup (50 g) unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 8 oz (225 g) cream cheese, softened
  • 1/2 cup (120 ml) pumpkin puree
  • 1/4 cup (50 g) granulated sugar (for pumpkin layer)
  • 1 teaspoon vanilla extract (for pumpkin layer)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 large egg (for pumpkin layer)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8×8-inch baking dish by greasing it with butter or nonstick spray.
  3. Mix the melted butter, granulated sugar, and brown sugar in a large mixing bowl until smooth and glossy.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Sift in the all-purpose flour, cocoa powder, salt, and baking powder, folding gently until just combined.
  6. Beat the cream cheese, pumpkin puree, granulated sugar, vanilla extract, egg, cinnamon, and nutmeg in a separate bowl until creamy and smooth.
  7. Pour half of the brownie batter into the prepared dish, then dollop spoonfuls of the pumpkin cream cheese mixture on top, followed by the remaining brownie batter.
  8. Swirl a knife gently through the layers to create a marbled effect.
  9. Bake for 25-30 minutes, until a toothpick inserted in the center comes out with a few moist crumbs.
  10. Cool in the pan for at least 20-30 minutes before cutting into squares.

Notes

For added texture, consider folding in nuts or chocolate chips. Serve warm with ice cream or a drizzle of caramel.
