Ultimate Pumpkin Cream Cheese Bread

  • 1 large egg
  • 3/4 cup light brown sugar
  • 1/4 cup oil
  • 1/4 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/2 tablespoon pumpkin pie spice
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 3 tablespoons all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5 inch loaf pan with butter or oil, or use parchment paper.
  3. Combine the pumpkin puree, egg, brown sugar, oil, sour cream, and vanilla in a large mixing bowl until well blended.
  4. Whisk together the flour, baking powder, baking soda, pumpkin pie spice, and salt in another bowl.
  5. Incorporate the dry mixture into the pumpkin mixture, stirring until just combined.
  6. Beat the softened cream cheese with granulated sugar and flour until creamy in a small bowl.
  7. Pour half of the pumpkin batter into the loaf pan, then dollop the cream cheese filling, and top with the remaining batter.
  8. Swirl the batter and filling gently with a knife.
  9. Bake for 60-70 minutes, until a toothpick comes out clean.
  10. Cool in the pan for 10 minutes before transferring to a wire rack.
