Easy Applesauce Cake With Creamy Frosting

A moist and perfectly spiced applesauce cake topped with creamy frosting, perfect for fall gatherings.

  • 2 cups (250g) all-purpose flour
  • 1 tsp baking soda
  • 1 ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp salt
  • ½ cup (113g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 cup (240ml) unsweetened applesauce
  • ½ cup (60g) optional chopped nuts or raisins (walnuts or pecans recommended)
  • For the frosting: 8 oz (225g) cream cheese, softened
  • 4 tbsp (57g) unsalted butter, softened
  • 1 ½ cups (180g) powdered sugar, sifted
  • 1 tsp vanilla extract
  • 12 tbsp (15-30ml) milk, optional

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Mix dry ingredients: In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. Cream together butter and sugar in a large bowl until light and fluffy—about 2-3 minutes.
  4. Add eggs, one at a time, mixing well after each addition, and then add vanilla extract.
  5. Incorporate applesauce into the mixture.
  6. Combine the dry ingredients with the wet mixture, mixing until just combined.
  7. Fold in nuts or raisins if using.
  8. Bake the batter in the prepared pan for 30-35 minutes or until a toothpick comes out clean.
  9. Cool the cake in the pan for 10 minutes before transferring to a wire rack to cool completely.
  10. Prepare the frosting by beating cream cheese and butter until smooth, then gradually add sifted powdered sugar and mix in vanilla extract.
  11. Add milk if needed for desired consistency.
  12. Frost the cake once completely cool, and serve.

Notes

For variations, try adding pumpkin puree or chocolate chips for a twist!
