  • 4 tablespoons butter
  • 1/4 cup all-purpose flour
  • 1 small onion (chopped)
  • 2 garlic cloves (minced)
  • 6 cups chicken broth
  • 2 cups milk
  • 1 cup carrots (shredded)
  • 2 teaspoons parsley flakes
  • Salt and pepper for seasoning
  • 1 package (16 ounces) mini potato gnocchi
  • 1 cup fresh spinach (chopped)

Instructions

  1. Prep the chicken: Season with salt and pepper, then sauté until cooked through and shred.
  2. Sauté the aromatics: Melt butter and olive oil, then add onions and garlic, cooking until fragrant.
  3. Make the roux: Stir in flour to create a roux, cooking for about 2 minutes.
  4. Add the liquid: Gradually whisk in chicken broth, then pour in milk, stirring until combined.
  5. Toss in the veggies: Add shredded carrots and chicken, seasoning to taste, then simmer for 10 minutes.
  6. Cook the gnocchi: Add gnocchi and cook until they float to the top, about 5-7 minutes.
  7. Add the spinach: Stir in fresh spinach and cook until wilted for about 2 minutes.
  8. Taste and adjust: Season to taste and serve with optional garnishes.
