Key Lime Pie Bars

These Key Lime Pie Bars are a refreshing twist on the classic key lime pie, featuring a buttery crust and a creamy, tangy filling.

  • 1 and ½ cups graham cracker crumbs
  • ⅓ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 3 large eggs
  • 1 cup sweetened condensed milk
  • ½ cup key lime juice
  • Zest of 2 key limes
  • Powdered sugar (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine 1 and ½ cups of graham cracker crumbs with ⅓ cup of granulated sugar and ½ cup of melted unsalted butter. Press into a greased 8×8-inch baking pan and bake for 8-10 minutes until golden.
  3. Whisk together 3 large eggs, 1 cup of sweetened condensed milk, ½ cup of key lime juice, and the zest of 2 limes until smooth.
  4. Pour the filling over the pre-baked crust and bake for an additional 15 minutes.
  5. Let the bars cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours.
  6. Dust with powdered sugar, slice into bars, and serve chilled.

Notes

For a tropical twist, mix in shredded coconut into the crust, or swirl in berry puree before baking.
