Coconut Cream Dream Bars

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup sweetened condensed milk
  • 1 ½ cups shredded coconut (sweetened)
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • Toasted coconut flakes (for garnish)

Instructions

  1. Prepare the crust: In a mixing bowl, combine the graham cracker crumbs and melted butter until fully combined.
  2. Pack the crust: Press the mixture firmly into the bottom of a greased 9×9-inch baking dish.
  3. Bake the crust: Preheat your oven to 350°F (175°C) and bake for 8-10 minutes until lightly golden.
  4. Prepare the filling: In another mixing bowl, combine the sweetened condensed milk, shredded coconut, and powdered sugar. Mix until smooth.
  5. Spread the filling over the crust: Pour the coconut mixture over the cooled crust and spread evenly.
  6. Chill: Cover with plastic wrap and refrigerate for at least 2-3 hours, or until set.
  7. Whip the cream: Whip the heavy cream with the vanilla extract until soft peaks form.
  8. Top the bars: Spread the whipped cream over the set filling layer evenly.
  9. Garnish: Sprinkle toasted coconut flakes over the whipped cream.
  10. Slice and serve: Cut the bars into squares and serve chilled.

Notes

For a dairy-free version, use coconut milk instead of sweetened condensed milk and whipped coconut cream instead of heavy whipping cream.
