Raspberry Peach Cobbler

A delightful summer dessert featuring fresh raspberries and peaches, topped with a buttery, crumbly crust.

  • 3 cups fresh raspberries
  • 2 large peaches (peeled & sliced)
  • 3 tablespoons all-purpose flour
  • 1/3 cup granulated sugar
  • 1/2 lemon (juiced; about 12 tablespoons)
  • 1/4 teaspoon cinnamon
  • 3 tablespoons butter (melted)
  • 1/3 cup packed brown sugar
  • 1/3 cup all-purpose flour (for the topping)
  • 2/3 cup rolled oats
  • 1/4 teaspoon cinnamon (for the topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the fresh raspberries and sliced peaches. Add the flour, granulated sugar, lemon juice, and cinnamon, and gently toss together.
  3. Pour the fruit mixture into a greased 9×9-inch baking dish.
  4. In a separate bowl, mix the melted butter, brown sugar, 1/3 cup flour, rolled oats, and 1/4 teaspoon cinnamon until crumbly.
  5. Evenly sprinkle the topping over the fruit filling.
  6. Bake for about 35-40 minutes, or until bubbling and golden brown.
  7. Once baked, remove from the oven and let cool for 10-15 minutes before serving.

Notes

Serve warm with vanilla ice cream or whipped cream for an extra treat.
