Stuffed Salmon With Spinach & Feta

A delicious and visually stunning stuffed salmon dish filled with spinach, feta, and roasted red peppers, ready in just 30 minutes.

Ingredients

  • 4x 6-ounce pieces of salmon
  • 2 Tbsp olive oil
  • 3 cups baby spinach, packed
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • A pinch of cayenne pepper
  • Approx. 5.3-ounce block of feta cheese
  • 1/4 cup parmesan, freshly grated
  • 1/4 cup jarred roasted red peppers, chopped
  • Salt + pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the salmon by patting dry and cutting a pocket in each fillet.
  3. Sauté the spinach in olive oil until wilted, about 2-3 minutes.
  4. Mix the filling with sautéed spinach, feta, parmesan, roasted peppers, and spices.
  5. Stuff each pocket in the salmon with the filling mixture.
  6. Sear the stuffed salmon in a skillet with olive oil for 4 minutes on one side, then flip and cook for 2 minutes.
  7. Transfer the salmon to a baking dish and bake for 10-12 minutes.
  8. Check for doneness with a fork and ensure an internal temperature of 145°F (63°C).
  9. Serve immediately, garnished with fresh herbs if desired.

Notes

For a flavorful twist, feel free to substitute the feta with herbed cream cheese or add nuts for crunch.
