Grain-Free Mini Berry Yogurt Breakfast Tarts

Delightful mini tarts made with a grain-free pistachio crust, filled with yogurt and topped with fresh berries, perfect for a healthy breakfast or brunch.

  • 1 cup shelled pistachios
  • 4 pitted Medjool dates
  • 1 tablespoon cacao powder
  • 1 tablespoon butter or ghee, melted (or avocado oil)
  • ¾1 cup yogurt
  • 1 cup fresh organic berries
  • 4 tablespoons organic apricot preserves (optional)

Instructions

  1. Blend nuts and dates: Toss the shelled pistachios and pitted Medjool dates into a food processor and blend until crumbly.
  2. Add cacao and butter/oil: Incorporate cacao powder and melted butter (or avocado oil) and pulse until well combined.
  3. Shape the crust: Grease a muffin tin and press the mixture into each cup to form tart shells.
  4. Chill in the fridge: Refrigerate the tart shells for about 15 minutes to firm up.
  5. Layer the yogurt: Fill each tart with yogurt of your choice until smooth.
  6. Add the fresh berries: Generously top each tart with a mix of fresh organic berries.
  7. Drizzle with preserves (optional): Add a light drizzle of apricot preserves for extra sweetness.
  8. Chill before serving: Refrigerate tarts for at least 30 minutes before serving.

Notes

These tarts can be customized with different fruits or yogurt flavors and are best enjoyed within a couple of days.
