Loaded Zucchini Casserole

A creamy, cheesy casserole featuring fresh zucchini, ground meat, and layered flavors, perfect for family dinners.

  • 4 medium zucchinis, sliced
  • 1 cup cooked ground beef or turkey
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup diced tomatoes
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and slice zucchinis.
  2. Sauté onions and garlic in olive oil for 3-5 minutes.
  3. Add cooked meat, diced tomatoes, and Italian seasoning. Season and let simmer for 5 minutes.
  4. Layer half of the zucchini in a greased baking dish, followed by the meat mixture and half the cheese; repeat layers.
  5. Sprinkle breadcrumbs over the top layer of cheese, if using.
  6. Bake covered for 25 minutes, then uncover and bake for an additional 10-15 minutes until golden brown.
  7. Cool for 10 minutes before slicing and serving.

Feel free to customize with different proteins or vegetables. Let the casserole sit before serving for easier slicing.
