  • 1 lb baby potatoes (halved or quartered if large)
  • 12 oz fresh green beans (trimmed)
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp dried parsley
  • Salt and pepper (to taste)
  • Optional: ¼ tsp red pepper flakes (for heat)
  • Optional garnish: fresh parsley or grated Parmesan

Instructions

  1. Preheat the oven to 425°F (220°C) and prepare a large baking sheet lined with parchment paper.
  2. Combine the sliced sausage, halved baby potatoes, and green beans in a large bowl.
  3. Drizzle the olive oil over everything and sprinkle with garlic powder, onion powder, smoked paprika, dried parsley, salt, and pepper. Add red pepper flakes if desired.
  4. Toss everything together until well-coated with olive oil and seasoning.
  5. Spread the mixture evenly on the baking sheet, ensuring potatoes have space around them.
  6. Roast in the oven for 25-30 minutes, stirring halfway through for even cooking.
