Honey Lime Chicken with Mango Salsa

A vibrant and sweet summer dish combining honey lime chicken with a fresh mango salsa.

  • 2 large boneless, skinless chicken breasts (or 4 small)
  • 2 tablespoons honey
  • Juice and zest of 2 limes
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 large ripe mango, diced
  • ¼ cup red onion, finely chopped
  • 1 small jalapeño, seeded and minced (optional)
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper, to taste
  • Cooked rice, quinoa, salad greens, or tortillas for serving
  • Lime wedges for garnish

Instructions

  1. Marinate the chicken: In a large bowl, whisk together the honey, olive oil, lime juice, lime zest, minced garlic, cumin, smoked paprika, salt, and pepper. Add the chicken and coat well. Let marinate in the fridge for at least 30 minutes.
  2. Prepare the salsa: Combine diced mango, red onion, jalapeño (if using), cilantro, lime juice, and salt and pepper in a medium bowl. Toss gently.
  3. Cook the chicken: Preheat a grill or grill pan over medium-high heat and cook chicken for 6-7 minutes per side or until the internal temperature reaches 165°F (75°C). Alternatively, bake at 400°F (200°C) for 20-25 minutes.
  4. Rest and slice the chicken: Allow the cooked chicken to rest for 5-10 minutes before slicing.
  5. Assemble and serve: Place sliced chicken over your chosen base and top with mango salsa. Serve with lime wedges.

Notes

For extra tenderness, marinate the chicken overnight. Use chilled bowls to enhance the freshness of the salsa.
