Carrot Apple Bread

A delightful Carrot Apple Bread that combines the natural sweetness of apples and the earthiness of carrots, perfect for breakfast or a snack.

  • 1 cup grated carrots
  • 1 cup grated apple
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts or raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a standard loaf pan with butter or cooking spray.
  3. Grate your carrots and apples using a box grater or food processor.
  4. Mix the grated carrots, grated apples, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract in a large bowl.
  5. Combine the all-purpose flour, baking powder, baking soda, cinnamon, and salt in another bowl.
  6. Combine the wet and dry ingredients, folding gently until just combined.
  7. Pour your batter into the prepared loaf pan and smooth the top.
  8. Bake for about 50-60 minutes, or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Serve warm with butter or honey. Pairs well with cream cheese or dusted powdered sugar.
