Fruit Pizza Cookies

Delightful cookies resembling a pizza, topped with creamy frosting and fresh fruits, perfect for summer gatherings.

  • 1½ cups granulated sugar
  • 1 cup butter (room temperature)
  • 2 large eggs
  • 2 tsp vanilla extract
  • to 5 cups all-purpose flour
  • 1/4 tsp salt
  • 3/4 tsp baking soda
  • 2 tsp baking powder
  • 1/2 cup milk
  • 1/2 cup heavy cream
  • 8 oz cream cheese (room temperature)
  • 3 tbsp butter (room temperature)
  • 1⅓ cups powdered sugar
  • 3 cups desired fresh fruit (strawberries, blueberries, raspberries, kiwi, etc.)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Creaming the butter and sugar until light and fluffy, about 2-3 minutes.
  3. Adding the eggs one at a time, incorporating fully before the next addition, then pour in the vanilla extract.
  4. Whisk together the flour, salt, baking soda, and baking powder in a separate bowl.
  5. Gradually add the dry ingredients to the butter mixture until just combined to avoid overmixing.
  6. Chill the dough in the fridge for about 30 minutes (optional).
  7. Scoop generous portions onto the baking sheets, leaving space for spreading, and bake for 10-12 minutes.
  8. Allow to cool on the baking sheet for about 5 minutes before transferring to a wire rack.
  9. Whip the cream cheese and butter together, then gradually mix in powdered sugar and milk until smooth.
  10. Spread the cream cheese frosting over each cookie and top with fresh fruits, arranging them creatively.

Notes

Chilling the dough can prevent the cookies from spreading too much. Feel free to mix and match your favorite fruits for toppings.
