  • 1 cup tzatziki (homemade or store-bought)
  • 1/2 cup baby tomatoes, chopped
  • 1/2 cup Persian cucumbers, chopped
  • 1/2 cup Kalamata olives, chopped
  • 2 tablespoons red onion, diced
  • 2 ounces feta cheese, crumbled
  • Drizzle extra virgin olive oil
  • 12 tablespoons fresh herbs (basil, mint, dill, etc.), chopped

Instructions

  1. Prepare Your Hummus: If you’re making your hummus from scratch, combine 1 can of drained chickpeas, 1/4 cup tahini, juice of 1 lemon, 2 cloves garlic, and a splash of water in a food processor. Blend until smooth! Depending on the consistency you like, add a touch more water. For store-bought, simply transfer to a beautiful bowl—you’re halfway there!
  2. Whip Up the Tzatziki: In a mixing bowl, combine 1 cup of plain Greek yogurt, 1 cup of shredded cucumber (with excess moisture squeezed out), juice of 1/2 lemon, 1 clove minced garlic, and a pinch of salt. Stir well and set it aside to let the flavors meld.
  3. Chop Your Fresh Produce: Take your baby tomatoes and chop them into quarters. Slice your Persian cucumbers, and give your red onion a nice dice. For a more refined look, try cutting the vegetables into equal sizes, as it makes for a lovely presentation.
  4. Toss the Olives: If you’re using whole Kalamata olives, chop them into bite-sized pieces. Alternatively, if you have pitted olives, slice them in half to maximize the flavor in each bite.
