Sweet and Spicy Kohlrabi Apple Slaw

A delicious and vibrant slaw combining crunchy kohlrabi, crisp apples, and a spicy kick from radishes, perfect for summer gatherings.

  • 2 medium kohlrabies, peeled
  • 1 large apple (Honeycrisp or Fuji recommended)
  • 1 large purple radish (or 45 standard radishes)
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped walnuts, toasted
  • Shaved parmesan
  • 4 tbsp extra virgin olive oil
  • 12 tbsp lemon juice
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • Kosher salt and fresh ground black pepper (to taste)

Instructions

  1. Prep your vegetables: Peel the kohlrabi and slice it into matchsticks. Chop the radish into thin strips.
  2. Toss the kohlrabi, apple (cored and sliced), and radish in a large bowl along with the chopped parsley.
  3. Toast the walnuts in a skillet over medium heat for 3-5 minutes until golden.
  4. Mix the dressing by combining olive oil, lemon juice, honey, Dijon mustard, salt, and pepper in a separate bowl.
  5. Dress the slaw by pouring the dressing over the mixture and tossing gently.
  6. Chill for at least 15 minutes to meld the flavors.
  7. Serve on a platter and optionally add shaved parmesan on top.

Notes

This slaw can be made ahead of time and lasts up to two days in the fridge. Adjust the spiciness by adding more radishes if desired.
