Sweet and Spicy Kohlrabi Apple Slaw

A vibrant and crunchy slaw combining kohlrabi, apples, and a kick from radishes, perfect for summer gatherings.

Ingredients

  • 2 medium kohlrabies, peeled
  • 1 large apple (Honeycrisp or Fuji preferred)
  • 1 large purple radish (or 45 standard radishes)
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped walnuts, toasted
  • Shaved parmesan
  • 4 tbsp extra virgin olive oil
  • 12 tbsp lemon juice
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • Kosher salt and fresh ground black pepper (to taste)

Instructions

  1. Prep your vegetables by peeling the kohlrabi and slicing it into matchsticks.
  2. Toss the kohlrabi, apple, and radish together in a large bowl along with chopped parsley.
  3. Toast the walnuts over medium heat until golden and fragrant, then add to the slaw mixture.
  4. Mix the dressing by combining olive oil, lemon juice, honey, Dijon mustard, salt, and pepper in a bowl.
  5. Dress the slaw mixture with the dressing and toss gently.
  6. Chill for at least 15 minutes to let flavors meld.
  7. Serve the slaw on a platter, optionally garnishing with shaved parmesan.

Notes

Experiment with variations like creamy yogurt, spicy jalapeños, or different nuts.
