  • 1 cup cherry tomatoes
  • 1/4 red onion
  • 1/4 cup fresh basil leaves
  • 1/4 cup feta cheese
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Wash and prepare your vegetables: Rinse cucumbers and cherry tomatoes under cold water, slice cucumbers in half lengthwise, and chop into bite-sized pieces.
  2. Halve the cherry tomatoes: Cut each cherry tomato in half for flavor bursts.
  3. Slice the red onion: Thinly slice red onion for balance.
  4. Chop the fresh basil: Roll basil leaves tightly and slice thinly.
  5. Mix the dressing: Whisk olive oil and red wine vinegar with a pinch of salt and pepper.
  6. Combine all ingredients: In a bowl, add cucumbers, tomatoes, onion, and basil. Toss gently.
  7. Add feta: Crumble feta over the salad and mix gently.
  8. Dress the salad: Drizzle dressing over and toss. Let sit for 10 minutes before serving.

Notes

Serve with toothpicks or crusty bread for a delightful summer meal. Don’t dress the salad until just before serving to maintain texture.
